“Located in a remote wilderness near the Canadian border, our home Metallak Lodge, is named after Metallak, one of the last great leaders of the Abenaki Indians, who lived nearby. Our outdoor eating place is located in a timber frame pavilion attached to the Lodge, and consists of a wood-fired Argentinian barbecue and a wood fired Italian pizza oven. The Proline hood was a critical necessity to remove the smoke that would otherwise get trapped underneath the roof pavilion but instead is now easily expelled above the roof by a ten foot high chimney.”
